Thomas Papa

Chef Thomas Papa has been in charge of the kitchen of the La Gallina restaurant in Gavi since 2019. After 5 years’ experience as a sous-chef, Thomas has now been managing his kitchen for one year with gentle determination and strong passion. In 2019, Thomas was very proud to have been nominated by Guida dell’Espresso among “the best Chefs in Piedmont”, a recognition that highlights the skills of this talented 33-year-old.
His ambition and his humility mean he never feels he has “arrived” but, on the contrary, he always wants to learn more and improve his techniques.
Thomas has fully embraced the plans and the project of the Moccagatta family. He loves the region so much that all the ingredients he chooses for his refined cuisine are local.
 
They say that cuisine is an art form: I’m passionate about combining flavours to create unique experiences from simple ingredients.
